Suitable for ages 8 months and up, this mild stew has oat cereal, leeks and pickerel you can flake as small as you’d like. For babies, add milk or breast milk to thin and purée to desired consistency.

How to make

Ingredients

  • 1 pkg (227)PC®Freshwater Pickerel Skin-On Fillet, thawed
  • 1 tbsp (15 mL)PC®Organics Extra Virgin Olive Oil
  • 1/2 cup (125 mL)Diced leeks, white and pale green parts only
  • 1 cup (250 mL)PC®Blue Menu®Chicken Broth
  • 1/3 cup (75 mL)PC®Organics Oat Cereal add water Baby Cereal

How to make

  • Step 1Dry skin side of fish with paper towel. Cut in thirds crosswise. Set aside.
  • Step 2Heat oil in frying pan over medium-low heat. Cook leeks 6 to 8 minutes, stirring frequently, or until tender, pale and translucent.
  • Step 3Pour in broth; bring to a simmer. Place fish in pan skin-side up. Cover and simmer 6 to 8 minutes or until fish is cooked through and easily flakes when tested with fork. Remove from heat.
  • Step 4Transfer fish to cutting board; gently remove and discard skin. Using fork, flake fish into small chunks. Stir cereal into pan with leek-broth mixture until thickened and well combined. Stir in fish. Serve immediately or portion into airtight containers and refrigerate for up to two days or freeze for up to one month.
